The Smoky Smash Taco

Ingredients

The Base: 1 lb Ground Beef (80/20 for the best crust), 8 small flour tortillas
The Smash Seasoning: 2 tbsp Midnight Ember (our star for that smoky, dark char)

The Scarlet "Fire" Sauce:

1/2 cup Mayo or Greek Yogurt
1 tsp Scarlet Rush (the bright, spicy kick)
1 tsp Lime juice + 1 tsp Honey

The Toppings: Pickled red onions, shredded lettuce, and extra sharp cheddar

Step-by-Step Instructions

1. Prep the Beef

Divide beef into 2oz balls. Do not season the meat yet!

2. The Smash

Place a beef ball on a tortilla. Press it down extremely thin with a flat spatula or weight until the beef covers the entire tortilla.

3. Season Heavily

Sprinkle a generous layer of Midnight Ember directly onto the raw beef side.

4. The Sear

Place the tortilla beef-side down into a screaming hot pan. Sear for 2 minutes until the beef forms a dark, smoky, crispy “Midnight” crust.

5. The Flip

Flip the taco to toast the tortilla for 30 seconds. Add cheese immediately so it melts from the residual heat.

6. The Drizzle

Top with lettuce, onions, and a heavy zigzag of your Scarlet Rush Fire Sauce.
