The Strategy: This version is all about the silky texture and charred chicken.


The Ingredients

  • Chicken: 1.5 lbs chicken thighs (cut into cubes).

  • The Heat: 2 big spoons of Scarlet Rush chili powder (split for marinade and sauce).

  • Yogurt: 1/2 cup Greek yogurt.

  • The Sauce Base: 1 can (14 oz) tomato sauce and 1 big spoon ginger-garlic paste.

  • The Velvet Finish: 1/2 cup heavy cream and 4 big spoons of butter.

  • Aromatics: 1 big spoon lemon juice 


The Steps

  1. Marinate & Char: Mix the chicken with yogurt, lemon juice, 1 spoon of Scarlet Rush, and ginger-garlic paste. Let it sit, then broil in the oven on high heat until the edges are slightly burnt/charred.

  2. Make the Base: In your large pan, simmer the tomato sauce with the second spoon of Scarlet Rush and the butter.

  3. The Secret Step (The Strain): For that "Aga’s" velvet finish, pour your tomato base through a sieve into a bowl to remove any lumps, then pour it back into the pan. Use your ladle to push the sauce through the mesh quickly.
