Spicy Smoky Cheeseburger Soup

This Spicy Smoky Cheeseburger Soup is hearty, creamy, and full of bold flavor! Made in one pot with ground beef, potatoes, and a rich cheesy broth, finished with Midnight Ember chili powder for that perfect smoky kick.

Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 2 tbsp butter
  • 3 tbsp flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tsp Midnight Ember Chili Powder
  • 2 cups sharp cheddar cheese, shredded
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium-high heat. Drain most of the grease and set the beef aside.
  2. In the same pot, melt the butter. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and Midnight Ember Chili Powder. Stir for 30 seconds until fragrant.
  4. Sprinkle in the flour and cook for 1 minute. Slowly pour in the chicken broth while stirring.
  5. Add the potatoes and cooked beef. Bring to a boil, then reduce heat and simmer for 10–12 minutes until potatoes are tender.
  6. Stir in the milk and let it heat through. Remove from heat, then stir in the shredded cheddar until melted and creamy.
  7. Season with salt and pepper. Serve hot and enjoy!
