This Spicy Smoky Cheeseburger Soup is hearty, creamy, and full of bold flavor! Made in one pot with ground beef, potatoes, and a rich cheesy broth, finished with Midnight Ember chili powder for that perfect smoky kick.
Ingredients
- 1 lb ground beef
- 1 small yellow onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 2 tbsp butter
- 3 tbsp flour
- 4 cups chicken broth
- 1 cup milk
- 1 tsp Midnight Ember Chili Powder
- 2 cups sharp cheddar cheese, shredded
- Salt and black pepper to taste
Instructions
- Brown the ground beef in a large pot over medium-high heat. Drain most of the grease and set the beef aside.
- In the same pot, melt the butter. Add onion, carrots, and celery. Cook until softened.
- Add garlic and Midnight Ember Chili Powder. Stir for 30 seconds until fragrant.
- Sprinkle in the flour and cook for 1 minute. Slowly pour in the chicken broth while stirring.
- Add the potatoes and cooked beef. Bring to a boil, then reduce heat and simmer for 10–12 minutes until potatoes are tender.
- Stir in the milk and let it heat through. Remove from heat, then stir in the shredded cheddar until melted and creamy.
- Season with salt and pepper. Serve hot and enjoy!
