  • Ingredients:

    • 4-6 bone-in, skin-on chicken thighs

    • 2 tbsp olive oil

    • 1.5 tbsp Midnight Ember Chilli Blend

    • 1 tbsp fresh lemon juice

    • Salt (to taste)

  • Instructions:

    1. Preheat your oven to 400°F (200°C).

    2. Pat the chicken dry with paper towels (essential for crispy skin).

    3. In a small bowl, whisk oil, Midnight Ember, and lemon juice into a thick paste.

    4. Rub the paste under and over the chicken skin. Season with salt.

    5. Roast for 35–40 minutes until the skin is golden crisp and juices run clear.
