Ingredients
Protein: 1 lb chicken breast (shredded)
The Spice: 1 tbsp Scarlet Rush
The Base: 10 oz thin wheat noodles
The Crunch: 1 julienned cucumber, 3 chopped green onions
The Sauce: 3 tbsp sesame paste (or peanut butter), 2 tbsp light soy sauce, 1 tbsp Chinkiang vinegar, 1 tsp sugar, 1 clove grated garlic
Optional: Chili oil for extra gloss
Step-by-Step Instructions
1. Season the Chicken
Toss your shredded chicken with 1 tsp of Scarlet Rush. This ensures the protein itself is flavorful before it even hits the noodles.
2. The "Snappy" Noodle Prep
Boil your wheat noodles. Immediately drain and rinse under cold water. This is the secret to the "Liang Mian" (cold noodle) texture.
3. Whisk the Sauce
Combine the sesame paste, soy sauce, vinegar, sugar, and garlic. Whisk until smooth. If it’s too thick, add a splash of water.
4. Assemble
Toss the cold noodles with the sesame sauce until every strand is coated.
5. Layer
Top the noodles with the seasoned shredded chicken and julienned cucumbers.
6. Final Punch
Sprinkle the remaining Scarlet Rush and the green onions over the top. Add chili oil if you want that classic spicy sheen.
