Slow-Roasted Carnitas

The "Heavy & Unapologetic" choice. The Midnight Ember chilli powder in the blend creates a deep, dark bark on the pork.

  • Ingredients: 1kg Pork Shoulder (cubed), 3 tbsp Midnight Ember, 1 cup Orange juice, 2 Bay leaves.

  • Method:

    1. Toss pork cubes in a bowl with a heavy coating of Midnight Ember and salt.

    2. Place in a slow cooker or heavy pot with orange juice and bay leaves.

    3. Cook low and slow (4 hours in oven at 150°C or 6-8 hours in a slow cooker) until the meat shreds with a fork.

    4. Chef’s Tip: For the "Midnight" finish, sear the shredded pork in a hot pan until the edges turn crispy and nearly black. Serve in warm corn tortillas.
