A high-flavour, low-cleanup weeknight staple.

Ingredients:

1 lb chicken breast, cut into bite-sized cubes

1 cup white rice

2 cups chicken broth

1/2 onion, finely diced

2 tbsp Midnight Ember Chilli Blend

1 tbsp oil

Instructions:

In a large pot, sauté chicken and onions in oil until the chicken is lightly browned.

Add Midnight Ember and dry rice; stir for 1 minute to coat everything in the spices.

Pour in the broth. Bring to a boil, then cover with a tight-fitting lid.

Reduce heat to low and simmer for 18–20 minutes (don't peek!) until rice is tender and liquid is absorbed.
