One-Pot Midnight Chicken Over Rice

A high-flavour, low-cleanup weeknight staple.

  • Ingredients:

    • 1 lb chicken breast, cut into bite-sized cubes

    • 1 cup white rice

    • 2 cups chicken broth

    • 1/2 onion, finely diced

    • 2 tbsp Midnight Ember Chilli Blend

    • 1 tbsp oil

  • Instructions:

    1. In a large pot, sauté chicken and onions in oil until the chicken is lightly browned.

    2. Add Midnight Ember and dry rice; stir for 1 minute to coat everything in the spices.

    3. Pour in the broth. Bring to a boil, then cover with a tight-fitting lid.

    4. Reduce heat to low and simmer for 18–20 minutes (don't peek!) until rice is tender and liquid is absorbed.
