Slow-Cooker Chilli

Deep, smoky, and rich this is the ultimate "honest" home-cooked comfort meal.

The Ingredients

  • 1 lb Ground Beef (or Ground Turkey/Lentils)

  • 2 tbsp Midnight Ember Chilli Blend

  • 1 large Onion, diced

  • 2 cans (15oz) Beans (Kidney and Black beans work best), rinsed

  • 1 can (28oz) Crushed Tomatoes

  • 1 tbsp Tomato Paste (for thickness)

  • 1 tsp Salt (Adjust to your taste, as the blend is salt-free)

  • The Secret Touch: 1/2 cup of leftover coffee (this makes the peppers in your blend taste incredible).

The Instructions

  1. Brown the Meat: In a skillet over medium-high heat, brown the ground meat with the diced onion. Drain any excess fat.

  2. The Spice Bloom: Stir in the Midnight Ember blend for 30 seconds while the meat is still in the skillet. This "wakes up" the smoky oils.

  3. The Dump: Transfer the meat/onions to your slow cooker. Add the beans, crushed tomatoes, tomato paste, salt, and coffee.

  4. Slow Cook: Stir well. Set to LOW for 7-8 hours or HIGH for 3-4 hours.

  5. Final Check: Taste before serving. Since Midnight Ember is pure spice, this is when you add a final pinch of salt or a squeeze of lime to brighten the flavours.
