Roasted Cauliflower Steaks (Vegetarian)

A deeply savory vegetarian main that feels substantial.

  • Ingredients:

    • 1 large head of cauliflower, sliced into 1-inch thick "steaks"

    • 3 tbsp olive oil

    • 1 tbsp Midnight Ember Chilli Blend

    • 1 tbsp maple syrup or honey

    • Salt (to taste)

  • Instructions:

    1. Preheat your oven to 400°F (200°C).

    2. Whisk the oil, Midnight Ember, syrup, and a pinch of salt together.

    3. Lay cauliflower slices on a parchment-lined baking sheet.

    4. Brush both sides of the cauliflower generously with the spice mixture.

    5. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized at the edges.
