Ingredients
Protein: 1 lb Extra Firm Tofu (pressed and cubed)
Spice: 3 tbsp Midnight Ember
The Base: 1 can Black Beans + 1 can Fire-Roasted Tomatoes
Aromatics: 1 Bell Pepper (chopped) + 1 White Onion (diced)
Liquid: 1/2 cup Vegetable Broth + 1 tbsp Soy Sauce
Step-by-Step Instructions
1. Prep and Press
Press your tofu for at least 15 minutes to remove all moisture. Cut into 1-inch cubes.
2. The "Bark" Coating
Toss the tofu cubes in a bowl with 2 tbsp of Midnight Ember and a splash of soy sauce until every side is dark red.
3. The Sear
Heat a cast-iron skillet with a little oil. Sear the tofu on high heat until the edges are crispy and blackened — this is your "bark". Remove and set aside.
4. Build the Chili
In the same pan, sauté the onion and pepper. Add the tomatoes, beans, broth, and the remaining Midnight Ember.
5. Simmer
Let the mixture thicken for 10 minutes. Fold the "barked" tofu back in just before serving to keep that smoky crunch.
6. Garnish
Top with avocado and a dollop of Greek yogurt or vegan sour cream.
