Ingredients:
• 6–8 boneless chicken thighs
• 2 cups jasmine rice
• 3 cups water or chicken broth
• 2 tbsp Pepper Punch Midnight Ember Chilli Powder (divided)
• 4 garlic cloves, minced
• 1-inch ginger, sliced
• 2 tbsp oil
• Salt to taste
• Cucumber, cilantro & lemon for serving
Instructions:
1. Rub chicken with salt + 1 tbsp Midnight Ember.
2. In a pot, sauté garlic & ginger in oil.
3. Add chicken and lightly brown, then add rice.
4. Pour in water/broth + 1 tbsp Midnight Ember. Stir well.
5. Cover and cook on low for 20–25 mins until rice is fluffy and chicken is tender.
6. Slice chicken, plate over rice and serve with cucumber, cilantro & lemon.
