5-Minute Sour Cream & Onion Chicken Bites

These 15-Minute Sour Cream & Onion Chicken Bites are crispy, creamy, and packed with smoky heat! Juicy chicken cubes seared with Midnight Ember chili powder, then folded in thick sour cream and fresh green onions.

Ingredients:
- 1 lb boneless skinless chicken breasts, cut into ½-inch cubes
- 1.5 tsp Midnight Ember Chili Powder (divided)
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp salt
- 1 tbsp butter or olive oil
- ½ cup full-fat sour cream
- ½ cup green onions (white and green parts separated)

Instructions:
1. Pat the chicken cubes dry. Toss with 1 tsp Midnight Ember Chili Powder, onion powder, garlic powder, and salt until evenly coated.
2. Heat butter or oil in a large skillet over high heat. Sear the chicken for 3–5 minutes until a deep crimson crust forms. Flip and cook through.
3. Turn heat to medium. Add the white parts of the green onions and toss for 1 minute.
4. Turn off the heat. Drop a generous dollop of sour cream into the center of the pan.
5. Gently fold the sour cream through the chicken until a light pink sauce coats every piece.
6. Top with the green parts of the green onions and a final dusting of Midnight Ember Chili Powder. Serve hot.
